Three quick microwave recipes to keep the kids happy and entertained this festive season

The recipes below tick a few helpful boxes; they’re quick, you can serve them in a mug and you can even get the kids to help you prepare them. Banana Bread Cake in a Mug

If your kids love dessert but you’re focused on getting them to eat healthy, this banana bread mug cake is a delicious compromise.

 

Ingredients (Serves one)

1⁄2 medium size ripe banana, plus a few slices for garnish

1 tbsp almond butter

1 egg white

1⁄2 tsp vanilla extract

4 1⁄2 tbsp oat flour

1⁄4 tsp baking powder

1⁄4 tsp ground cinnamon, plus more for garnish

1⁄4 tsp kosher salt

 

Instructions

Prep 2 min | Cook 1 min | Ready 3 min

Place banana in a microwave safe cup or ramekin and mash with a fork.

Stir in almond butter, egg white and vanilla extract.

Add oat flour, baking powder, cinnamon and salt and mix until well combined.

Microwave on high for 45 seconds to 1 minute or until the middle of the cake is firm.

Top with banana slices and sprinkle with cinnamon.

 


 

Pizza in a Mug

When hunger strikes, enjoy a tasty pizza in a mug, in minutes. The kids can add any ‘creative’ toppings they like and it’s faster than a pizza delivery.

 

Ingredients (Serves one)

4 tbsp all-purpose flour

1/8 tsp baking powder

1/16 tsp baking soda

1/8 tsp salt

3 tbsps milk

1 tbsp olive oil

1 tbsp marinara sauce

1 generous tbsp shredded mozzarella cheese

5 mini pepperoni

1/2 tsp dried Italian herbs (basil or oregano will work)

 

Instructions

Prep Time 5 min | Cook Time 1 min | Ready 6 min

 

Mix the flour, baking powder, baking soda and salt together in a microwavable mug

Add in the milk and oil with mix together. There might be some lumps but that’s ok.

Spoon on the marinara sauce and spread it around the surface of the batter.

Sprinkle on the cheese, pepperoni and dried herbs.

Microwave for 1 minute and 10-20 seconds, or until it rises up and the topping are bubbling.

Enjoy straight away.

 


 

Brownie in a mug

Sometimes a brownie can hit the sweet spot like nothing else. And a brownie in a cup is more fun than a trip to the shops.

 

Ingredients (Serves one)

2 tbsps of butter

2 tbsps of sugar

1 firmly packed tbsp of light brown sugar

1/4 tsp of pure vanilla extract

Pinch of kosher salt

1 egg yolk

4 tbsps of flour

1 tbsp of unsweetened cocoa powder

2 heaping tbsps of semi-sweet chocolate chunks

 

Instructions

Prep Time 5 min | Cook Time 1 min | Ready 6 min

Melt butter in microwave safe mug or ramekin.

Butter should be melted, not boiling.

Stir together butter, sugars, vanilla and salt.

Stir in egg yolk. Do not use egg white. Save for a different recipe or discard.

Add flour and cocoa powder and stir again until well combined.

Finally, add chocolate chunks.

Cook for about 45 seconds in microwave.
