[What’s Cooking] Savour the Taste of Tradition with Litti Chokha this Weekend

This Friday, we are sharing the recipe from the Eastern state of India, Bihar. The quintessential traditional food was believed to have been a staple in the ancient Magadh kingdom. The dish is now a favorite among foodies across the country, with people adding their own flavors to it. Well, it’s the popular delicacy Litthi Chokha. Made with roasted eggplant and sattu (roasted and grinded gram). The cherry on the top is that the dish is healthy and keeps your tummy cool.

Cooking Time: 28 minutes | Serving: 7 to 10 Littis with Chokha

 

Ingredients

Refined Flour: 1 ½ cups

Yogurt: 1 cup

Salt: as per your taste

For Filling

Sattu: 1 cup

Ginger: 1 inch piece

Garlic chopped: 1 inch piece

Cloves: 4

Green chillies chopped: 2

Fresh coriander leaves (chopped): ½ cup

Carom seeds: 1 teaspoon

Onion seeds: ½ teaspoon

Salt: as per your taste

Lemon juice: 1 tablespoon

For chokha

Potatoes: 4 medium (boiled and mashed)

Brinjal: 1 medium (boiled and mashed)

Coriander seeds: 1 teaspoon

Dried red chillies: 2

Garlic crushed: 3-4 cloves

Green chillies chopped: 3-4

Coriander powder: 1 teaspoon

Cumin powder: 1 teaspoon

Dry mango powder: 1 teaspoon

Salt: as per your taste

 

Cooking method:

  1. Add salt and yogurt to the refined flour and knead into a soft dough
  2. Rest the dough for some time
  3. For the filling, mix sattu with ginger, garlic, green chillies, coriander leaves, carom seeds, onion seeds, salt, lemon juice and a little water
  4. Divide the dough into lemon sized balls and spread them into small puris with your fingers
  5. Place a portion of the filling mixture and once again roll into balls
  6. Add boiled potatoes, brinjal, red chillies, garlic, onions, green chillies, crushed coriander seeds, coriander powder, cumin powder, dry mango powder, salt and mix well
  7. Apply some oil with brush on a crusty plate and pace 7 littis on one side add chokha on the other side of the plate and brush with oil and press start button
  8. When MWO beeps second time, take out the chokha and press start button again
  9. When MWO beep second time, take out the chokha and press start button again
  10. When beep, take out the litti and dip them into ghee and serve hot with chokha
