Tompkins Square Bagels (TSB) is a must-visit local bakery in the East Village of New York City. It is known for its great hand-rolled bagels, freshly prepared sandwiches, tasty treats and, of course, the East Village atmosphere. For lovers of classic New York bagels, Tompkins Square is almost flawless… almost. The one minor complaint from customers has been the long wait times.

The Challenge

 

No one wants to wait a long time in line, especially when you’re hungry and looking at rows of delicious treats. But preparing food the traditional way – TSB makes everything to order right in front of guests – takes time. Throngs of customers lining up each morning were understandably frustrated and some took to social media to vent their displeasure. For TSB owner Christopher Pugliese, this hurt.
